INDIGO is the story of two childhood friends – Nish and AJ. Who turned a dream into a destination.
Indigo represents Creativity, Wisdom, Spiritualty and the elephant in the logo symbolizes strength, grace, and calm – the values that guide their service, Flavors, and spirit. INDIGO is not just about food. It’s about heritage, innovation, and heartfelt hospitality.

Their journey began 16 years ago in a hotel management college in Pune, India. Bound by friendship and passion for food, they followed different paths across the U.S. Nish honed his skills in the vibrant world of nightclubs and the refined atmosphere of fine dining, while AJ immersed himself in the heart of the kitchen and the welcoming ambiance of the front of house. Destiny brought them together in Fort Collins, a city they instantly felt at home in.
Here, they combined their experiences to create something special INDIGO – Modern Indian Cuisine & Bar.
